I've found in real world applications that although USB3 offers fast data transfers, it doesn't do very well on sustained data transfers (like video wants). As a result we stick with Firewire 800 / Esata / Thunderbolt on our macs when it comes to video.
For storing data USB3 is great - you can copy to it quickly... it just didn't treat us right when it came to video.
I think that you'll be very happy with Thunderbolt storage instead of USB.
(hang a Promise Pegasus RAID off of thunderbolt and the speed will blow your mind! ;) )
