Whatever is the highest one that you have the storage and bandwidth for.
For off-line I'd say that 36 would be fine. It would keep the system running smoothly and allow for lots of storage compared to the other options.
Thousands of films were off-lined - and still are - at SD resolutions, like 20:1.
Totally depends on budget. How much storage do you have compared to what they expect to shoot?
