I doubt that opening and MC7 bin in a compatible earlier version will alter
it in a way that will make it work in an even earlier version.
I'm not sure what aspect of the bin structure changed in MC7 to break
backward compatibility, but I'm guessing whatever it was the patches for
5.5, 6.0 and 6.5 have been created to just work around that change, rather
than remove it.
However I suspect a bin created in a patched earlier version will still be
backward compatible. So I expect you'd be able to copy the contents of a
7.0 bin in the latest 6.0 version to a new bin which would then open in
earlier versions.
Although I've used the words "suspect" and "expect" in there because I
really have no idea.
