Lion does not ship on disks. To do a clean install, you'll need to order a USB stick version or do it all online "app store" style. It'll take a long time.
Control-R on booting gives you the options.
To run 5.5.3, you may have to ensure that the box runs in 32 bit mode. Hold the 3+2 keys down when booting, (or 6+4 for 64 bit).
I avoided the 7.2 upgrade recently cuz it was unknown what would happen with 5.5.3. Let us know if it coughs up any furballs.
If it does. 6.0 would be the easy way to fix things.
