I offer:

The actual grouping of clips IS easy. What's hard is organizing them
for larger productions such as you describe. But that's always been
true for NLE editing. Organizing your material before editing is what
takes a lot of time. The only thing I can think of that takes longer
is capturing material in the first place.
I might add that there are things that can be done to speed things
up. If it's possible for all your cameras to use the exact same
timecode and TC type (DF or NDF) in sync, grouping those cameras
becomes much quicker. I'll bet you have a lot of 'wild' cams with
either no TC or non-sync'd TC.
